It’s always fun to create the Brewsters beers that people know and love, but the true passion of any brewer is to try new things, experiment, and just see what works. We create small batches of different styles of beer at our Oliver Square Edmonton brewpub to satisfy both our curiosity and yours. And when they’re gone, they’re gone.

Bock beer is a German strong lager style, and Doppelbock (as the name implies) is double strong. Bock in German means billy goat and considering the amount of alcohol in this beer (7.5 %/vol), one might feel like having been taken by the horns of just such a billy goat.
The character is malty all around both on the nose and on the palate with a full body and low to moderate bitterness. Doppelbock is generally a winter beer because of its high alcohol.
Commercial examples are mostly from Bavarian Breweries with Names like Optimator, Celebrator, Salvator or just simple name like Andechser Doppebock (the latter a monastic brew well worth a prilgrimage).
Malt: 2-Row, Munich, Cara-Munich, Cara-Aroma, Carafa
Hops: all German Hersbrucker and Perle
