1. In a large heavy bottom sauce pot, combine small diced apples, minced red onion and 2 tbsp. olive oil. Sauté over medium heat for 10 minutes until apples and onions are lightly translucent.
  2. Combine the remaining ingredients and add to apple mixture.
  3. Simmer over medium heat for 45 minutes to reduce by one-quarter. Make sure to mix simmering sauce frequently.
  4. Turn heat off and remove cinnamon sticks. Using a hand stick blender or food processor, pulse sauce until smooth, then strain through large hole china cap.
  5. Cool sauce and use as a BBQ baste for pork back ribs, chicken or burgers.
